Sébastien Gavillet: Wine and whiskey consultant, winemaker and distiller with 20+ years of experience in the industry. Sébastien is COO of Wine Aromas-Le Nez du Vin, a world leader in coffee, wine and whiskey sensory education. And he is head of the International Whisky Competition tasting panel, author of several books.
Sébastien also is co-founder and Head of Spirit Creation for NOCO Distillery, where he blends spirits using traditional and innovative techniques. NOCO Distillery is a new craft, micro distillery located in Fort Collins, Colorado. Sébastien will be offering exclusive new release tastings of the distillery's premium World Whiskey, a custom blend of three whiskeys--a Scottish-style, a Canadian-style, and a bourbon.
As a “nose for hire” and wine and whiskey consultant, Sébastien provides spirits tasting, blending, and production evaluation services, as well as marketing and branding guidance to wineries and distilleries. He advises collectors on acquiring and maintaining their wines and spirits collections and samples more than 4,000 different wines and spirits yearly.
Ken Kodys: Craft and luxury spirits specialist for Republic National Distribution Company. Ken has been on tasting panels for numerous competitions. He is certified under the Beverage Alcohol Resource (BAR) comprehensive distilled spirits and mixology program and has received WSET Level 2 spirits certification. Ken has been a product consultant to several craft distilleries and helps local distilleries grow their brands. In the past five years, he has been a purchasing agent for a restaurant group of 14 locations, as well as a cocktail expert. His restaurant consultant practice has helped to open or re-define upwards of 20 concepts. He works daily with small and large brands to develop products, market brands and to educate customers about the distinctive features of diverse spirits and brands.
Victor Matthews: Master Chef Victor Matthews--America's (and perhaps the world's) only quadruple World Master Chef, Master Distiller, Master Bourbon/Whiskey Sommelier, and certified Dining Room Master from the FDRP, as well as experienced French Quarter bartender. Chef Matthews is owner and master distiller of Black Bear Distillery in Green Mountain Falls, near Colorado Springs. He will be offering an exclusive new release tasting and discussion of the Black Bear Irish-Style Whiskey. At the 2017 Seattle International Spirits Competition, his Mountainshine Reserve won Gold in the single-barrel whiskey category, and he won bronze medals in both the Rum (Gold) category and the Vodka (Open) category--three international wins out of only 200 awards given.
Buz Dabkowski: Colorado Market Manager for Blue Ridge Spirits and Wine Marketing. Buz has deep experience in the beer, wine and spirits industry. He made his reputation through authoritative representation and seminars on single-malt scotch and fine boutique-style bourbons. As a natural story teller and expert on whiskeys, he enjoys a superb reputation for hosting trainings, seminars and events that entertain, as well as educate. Buz was the “Master of Whisky” at the Longs Peak Scottish-Irish Festival for many years, and before joining Blue Ridge Spirits, he was an event director and educator for Edrington and Remy Cointreau, and Spirits Specialist for Hazel's Beverage. He served for seven years as Colorado State Manager for Sazerac.
